Cabernet Franc
Cabernet Franc Colli Orientali del FriuliClassification V.Q.P.R.D. D.O.C. Eastern Hills of Friuli Grapes 100% Cabernet Franc Position and vineyards Marly hilly soil: East-facing mid-hill vineyards. Vines trained with a modified Sylvoz system, 4,000 vines per hectare. Harvest By hand, towards mid October; 60-65 quintals per hectare. Vinification The wine ferments in steel for around 12 days in contact with the skins. After is separated from the skins, the wine is left to refine, again in steel, for around 19 months. Alcohol content 12,5-13% Acidity 4,5-5 g/l (complete malolactic fermentation) Organoleptic properties Intense ruby red colour, characteristic herbal bouquet, rustic and penetrating with a hint of raspberry. As it evolves, the herbal note is balanced by a remarkably complex bouquet. Best served with Meat and game. Medium annual production 3,000 bottles |
