Sauvignon DOC FCO

It is a combination of 4 grape clones: one from Friuli (50%) and 3 French clones, which are first vinified separately, to obtain a beautiful balance between aromas and flavours, between varietal aromas and sapidity. Aged in steel tanks.

POSITION AND VINEYARDS

Marlyn hilly soil: four different vineyard for four clones situated on the hillside with the climate most suited to them; trained double arched cane style with 4000 vines per hectare, while the most recent vineyard are trained Guyot-style with 5000 vines per hectare.

HARVEST

By hand, towards min September; 60-65 quintals per hectare.

VINIFICATION

Whole grapes gently pressed; the must is decanted at low temperature and left to ferment at controlled temperature in steel tanks, then it remains for around 8 months on the yeast residues.

Straw-yellow in colour with greenish reflections, highly aromatic, delicate bouquet, bring to mind yellow peppers, peach and sage. Elegant, smooth flavour with a good body.

Hors d’oeuvres, vegetables soup, mushrooms, fish dishes with sauces.
